The tiles that cover the highest point of a roof, to prevent rain getting in.  Modern ridge tiles are often mechanically fixed but ridge tiles of older properties are bedded in mortar.  If the mortar wears away, it is important to rebed the ridge tiles to prevent water ingress into the roof timbers which can cause decay.
